Ingredients:
- 8 potatoes, weighing 1/4 pound (100 g) each
- 5 ounces (125 g) ground beef
- 3 tablespoons olive oil
- 1 cup freshly grated Parmigiano
- Minced parsley to taste
- Salt.
Preparation:
Scrub the potatoes and bake them until done (this will depend upon the potatoes; bake at 400 F (200 C) for 40 to 60 minutes, or until a thin skewer will run through them easily). Slice the tops off of them and set them aside to serve as lids.Scoop out the potato flesh, being careful not to break the skins, and squeeze it into a bowl through a potato ricer (you can simply mash the potatoes with a fork if need be). Combine the mashed potatoes with the olive oil, cheese, and minced meat, and season the mixture to taste with salt, pepper, and minced parsley. Carefully fill the potatoes with the mixture, cap them with their tops, and bake them in a moderate (350, 175 C) oven for about a half hour.
Serve them with a light red wine.
