Ingredients:
- 1 1/4 pounds (500 g) string beans, tips trimmed
- A clove of garlic, minced
- 2 tablespoons parsley, minced
- Red wine vinegar
- Olive oil
- Salt
Preparation:
Blanch the beans, run them under cold water, and break them up before putting them into a salad bowl. Season them with everything else, chill the salad lightly, and it's ready.Yield: 4 servings string bean salad.
