Tasty Meringued Fruit Cocktail - Coctail Di Frutta

This tasty, creamy fruit cocktail is a perfect example of the way modern Italian cooks are greeting new ingredients: mangoes are not native to Italy, but are much more common than they once were, and cheaper too. This is cool, refreshing, and will be very nice when it's hot out. To serve 2-4 (depending upon the number of glasses you fill):

Prep Time: 10 minutes

Ingredients:

  • 4 ripe apricots, chilled
  • 1 ripe mango, chilled
  • 1 cup chilled milk
  • A meringue about 3 inches (7 cm) in diameter (store bought will be fine)
  • 4 sprigs mint (optional)
  • 4 chilled glasses

Preparation:

Wash and dry the apricots. Split them and remove the pits. Peel the mango, separate the flesh from the seed, and dice it. Blend the fruit in a mixer, cover it, and chill the mixture for an hour.

Come time to serve your drink, give the mixture a quick stir and pour it into 4 glasses that you have chilled in the refrigerator.

Crumble the meringue into the blender. Add the milk and whir for a few seconds. Pour the milk mixture over the fruit, garnish with the sprigs of mint if you're using them, and serve at once.

Note: This will also be nice with other kinds of fruit, for example really rich, ripe peaches.
